Marinated Broccoli Salad

3 cups broccoli florets
1 red onion, thinly sliced
1 cup red bell pepper, thinly sliced
6 tbsp olive oil
1 teaspoon finely grated lemon zest
1 tbsp fresh lemon juice
2 tbsp raw apple cider vinegar
1 clove garlic, minced
salt, pepper to taste


Place in a large bowl the olive oil, lemon juice and zest, vinegar, garlic and whisk until combined. Add broccoli, pepper and onion and toss to combine.
Season to taste and marinate all day in the refrigerator.
